Recipe: quinoa salad with roasted pumpkin

This recipe combines the creamy texture of quinoa with the sweet flavour of quickly roasted pumpkin from the air fryer. A healthy and flavourful salad you can serve as a main or side dish. Enjoy a surprising mix of flavours and prepare pumpkin the easy way.

Ingredients

  • 1 pumpkin
  • 350 g quinoa
  • 100 g feta (optional)
  • 50 g chopped hazelnuts or almonds
  • 40 g spinach
  • 3 sprigs mint leaves
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 bunch fresh thyme

Method: quinoa salad with roasted pumpkin from the air fryer

  1. Wash and peel the pumpkin. Split in half, remove the seeds and cut the flesh into cubes of about 2 cm.
  2. Preheat the air fryer to 180 °C. In a large bowl, mix the pumpkin cubes with olive oil, the spices and the fresh thyme.
  3. Place the pumpkin cubes in the air fryer basket, make sure they don’t overlap.
  4. Cook the pumpkin for 20 minutes. Shake the basket halfway through for even cooking.
  5. Meanwhile, cook the quinoa according to the instructions on the packet and drain well.
  6. Divide the cooked quinoa over plates and place the roasted pumpkin on top. Then add the crumbled feta, chopped mint, nuts and spinach.
  7. Drizzle your favourite dressing over the salad and serve immediately.
