Recipe: gratin dauphinois

Gratin dauphinois is a delicious French classic with tender potato slices in a creamy sauce and a golden-brown crust. With this easy air fryer recipe, you’ll have a tasty, silky potato bake on the table in no time that suits any meal.

Ingredients

Potatoes are spread on a wooden surface, some in a burlap sack.
  • 1 kg waxy potatoes
  • 2 cloves of garlic
  • Fresh butter
  • 300 ml cream
  • 200 ml whole milk
  • Salt
  • Pepper
  • Nutmeg

Method: gratin dauphinois in the air fryer

  1. Wash the potatoes well and peel them immediately after washing to retain the starch. Slice into thin rounds, 2-3 mm thick.
  2. Preheat the air fryer to 180 °C. Use an ovenproof dish that fits inside or rub the air fryer basket with a cut clove of garlic and some butter.
  3. Arrange a layer of slightly overlapping potato slices in the dish or basket. Repeat until all the potatoes are used.
  4. In a bowl, mix the whole milk, cream, crushed garlic, a pinch of nutmeg, salt and pepper. Pour over the potatoes until fully submerged.
  5. Cook for 30 minutes at 180 °C. Then reduce the temperature to 160 °C and cook for a further 20 minutes, until the potatoes are tender and the top is golden brown.
  6. Insert the tip of a knife into the potatoes. If it slides in easily, your gratin is ready to serve!
